1chicken, approx. 1.3 kg
Olive oil
Salt
Lemons and thyme (optional)
Instructions
Clean the chicken thoroughly, then pat it dry with a little kitchen paper.
Rub the whole outside of the chicken with oil, then rub it with plenty of salt both inside and out.If you like, tie the legs together at the bone.*As in the video, you can also add lemon and thyme to your chicken. Squeeze lemon juice over the skin before you add the oil and salt, and tuck the squeezed-out lemons inside the chicken with a good handful of fresh thyme. Remember to salt the inside of the chicken with this method too.
Place the chicken breast-side down in the basket of your air fryer, and cook it for 25 minutes at 180°C. I use the standard air fryer setting.*If you want to make a gravy, it is worth keeping a little water in the bottom of the air fryer – but it must not come up and touch the chicken.
Turn the chicken over and cook it for a further 20-25 minutes at 180°C. Check on it as it cooks – air fryers vary in how hot they run. Ideally, check the temperature with a meat thermometer too – the chicken is cooked through at 75°C.
Let the chicken rest for 10-15 minutes before carving.
