Ingredients
1/2batchpizza dough - click here (or 2 pizza bases)
200gmascarpone
200gsmoked salmon, thinly sliced
1-2burrata
2potatoes
2handfulsrocket
1red onionsliced into thin rings
Mixed herbs and microgreens - use whatever you prefer
1/2lemon
Salt and pepper
Instructions
Divide the dough in 2 and roll out into thin circles about 30 cm in diameter.
Rinse and scrub the potatoes thoroughly, then cut them into very thin slices.
Spread the mascarpone over the bases, smoothing it right out, - just as you would a tomato sauce. If the mascarpone is very firm, it's a good idea to stir it loose first, so you don't tear the bases.
Arrange the potato slices on top of the mascarpone and season with salt and pepper.
Bake the pizzas for about 12-15 minutes at 250°C, then let the bases cool slightly on a couple of wire racks. Keep an eye on them, - ovens vary.
Scatter a handful of rocket over each pizza, then lay slices of salmon on top and place the burrata in the centre.Feel free to tear the burrata open and scatter small pieces around the pizza.
Sprinkle generously with fresh microgreens and herbs, add the onion rings and season with plenty of freshly ground pepper.
Once the pizzas are served, squeeze a little fresh lemon juice over them. It gives a lovely acidity against the rich fish and cheeses, - but adjust to taste.
