Instructions
Cook the pasta according to the packet instructions, then rinse it in plenty of cold water until it has cooled completely, - leave it to drain in a sieve.*You can also happily use leftover cooked pasta if you have some.
Meanwhile, mix the ingredients for the marinade, - oil, basil, parsley, garlic and sun-dried tomatoes, - season with salt and pepper and set aside.
Pour boiling water over the green beans and leave them to stand for 3-4 minutes, - then drain them well.
Heat a little oil in a frying pan and fry the sliced mushrooms over a high heat. They should be nicely browned and have released all their liquid.
Add the onions and fry for a couple of minutes, then add the green beans, courgette, red pepper and half of the marinade.
Fry everything together for about 4-5 minutes, - and season with a little salt and pepper.
Add the pasta along with the parmesan and the rest of the marinade. Toss well to combine.
Fold the rocket into the pasta salad, season with salt and pepper, and serve the salad warm
