Ingredients
600gfresh tomatoes
1onion, finely chopped
3clovesgarlic, grated or crushed
3tbsptomato paste (optional)
1tspdried basil
1tspdried oregano
1tspsugar
Salt and pepper
Oil
Instructions
Blend the tomatoes to a smooth purée.
Heat a splash of oil in a saucepan and fry the onion and garlic for a couple of minutes.
Add the tomato paste and cook for a minute or so, then pour in the blended tomatoes, sugar and dried herbs.Season the sauce with a little salt and pepper too.
Let the sauce simmer over a medium heat until well reduced, stirring regularly. It will need around 20-30 minutes, depending on how much liquid the tomatoes contain – and, of course, on how thick you want the sauce.
Season the sauce to taste with salt and pepper, and a little more sugar if you feel it lacks sweetness – this depends very much on the tomatoes.
Keep the sauce in the fridge until needed. It also freezes well in smaller portions.
