Instructions
Heat a little oil in a frying pan and fry the chicken breasts until golden and cooked through – season with salt and pepper. Let them rest, then cut into slices.
Spread the bottom slices of bread with chilli sauce and top with cheese, chicken, onion and pepper – then sprinkle over a little extra cheese.
Place the next slice of bread on top, spread this with chilli sauce too and top with cheese, chicken, onion and pepper.
Sprinkle the last of the cheese over both sandwiches and finish with the final slice of bread.
Toast the sandwiches in a sandwich press or similar until the filling is hot and the cheese has melted. They can also be fried in a little butter or oil in a frying pan – press them down gently as they cook.
