200mlGreek yogurt
1/2lemon, finely grated zest
1tsplemon juice
Freshly ground pepper and a pinch of salt
Instructions
Whipped feta
Put the feta in a mini chopper with a couple of tablespoons of the yogurt and blitz until the feta is smooth and creamy.
Add the rest of the yogurt, the lemon juice, lemon zest and freshly ground pepper, – and blitz in the mini chopper until you have a smooth, creamy consistency. Season to taste with salt.*Take care not to blend it for too long in the mini chopper, or you may find the consistency becomes too thin.
Toast with whipped feta, figs, honey and hazelnuts
Toast the bread, - either in a toaster or in a frying pan with a little butter or oil.*Let the slices cool so the whipped feta does not melt when you spread it on.
Spread a generous layer of whipped feta on each slice and top with slices of fresh fig.
Drizzle honey over the top, and finish with the toasted, chopped hazelnuts, fresh thyme, freshly ground pepper and a little flaky sea salt.
