Instructions
Heat a splash of oil in a frying pan and brown the beef well, - season with salt and pepper.
Add the onion, garlic, ginger and chilli, and fry for a couple of minutes or until the onion is translucent. You may want to start with just 1/2 a chilli, - with or without the seeds.
Add the tomato purée and red curry paste and fry for about a minute.I usually use 2 1/2 tablespoons, - which makes it pleasantly spicy together with 1/2 a fresh chilli.
Add the peppers and spring onions, heat through for a couple of minutes and pour over the coconut milk. Let the curry simmer for 10-15 minutes.
Season to taste with fish sauce, lime juice, salt and pepper, - and add more chilli if you would like it spicier.Top with chopped peanuts, spring onion tops and chilli if you like, - and serve with rice or noodles.
