1/2vanilla pod, seeds scraped out- or 1 tsp vanilla sugar
3-4tbsplemon juice
1lemon, finely grated zest
400gfresh strawberries
Mint and/or edible violas (optional)
Instructions
The easiest strawberry cake in just 10 minutes
Rinse the strawberries, hull them and cut them in half. Leave them to dry on a tea towel.
Put the mascarpone, cream, icing sugar, vanilla, lemon zest and lemon juice in a bowl and whisk together until the cream thickens.*The cream thickens very quickly, so take care not to overwhisk it, or it will turn grainy. The cream should be thick enough to hold its shape on the cake and keep the strawberries in place.
Spread the cream over the top of the cakes. You can put the cream in one large dollop in the centre of the cake and spread it out with a spoon, or you can pipe it from a piping bag. The cake is topped with strawberries, so no neat piping work is needed.
Top the cake with the halved strawberries and decorate with mint and/or edible violas, if you like.
