Instructions
Cut all the vegetables into bite-sized pieces. They will be flash-fried, so if you use hard vegetables such as carrots, cut them into fine batons or thin slices.
Mix the ingredients for the stir-fry sauce - teriyaki, soy sauce, sesame oil and cornflour - and stir well. Make sure all the lumps of cornflour are stirred out.
Heat a pan with a splash of oil and brown the chicken well. Season with freshly ground pepper.
Add the onion, garlic, ginger and your vegetables, and stir-fry briskly over a high heat for about 2-3 minutes. They should stay nice and crisp.
Pour over the stir-fry sauce and toss well with the meat and vegetables. Add a handful of fresh basil leaves if you like, and season to taste with salt (or soy sauce) and freshly ground pepper.
Serve with rice, noodles or, for example, courgetti.
