Rocket salad with tomatoes, parmesan and balsamic glaze

An easy, simple recipe for a salad with rocket, tomatoes, parmesan and balsamic glaze.

Ingredients

  • 1 bag rocket
  • 200 g cherry tomatoes, cut into wedges
  • 50 g parmesan, cut into small cubes
  • 30 g pine nuts
  • 1 1/2 tbsp olive oil
  • 1 tbsp balsamic glaze
  • Freshly ground pepper

Instructions

  • Quickly toast the pine nuts in a dry frying pan.
  • Put the rocket, tomatoes, parmesan and pine nuts in a bowl, drizzle the oil over the salad and season with freshly ground pepper. Toss well.
    *If you like, save a little of the parmesan and pine nuts for the top.
  • Top the salad with the balsamic glaze and scatter over the remaining parmesan and pine nuts.
