Put the lime wedges, the rinsed raspberries, sugar and rum in a shaker or a glass and muddle everything together well – ideally with a muddler.
Add the mint leaves and press/bruise them gently so they release their oils – just a couple of times with the muddler – and take care not to crush them too much.
Fill 2 glasses with ice, ideally crushed ice – and divide the mixture between the glasses.Let the lime wedges, mint and so on go into the glasses too – there is plenty of flavour in them, and it looks wonderfully rustic.
Stir well with a spoon so everything is thoroughly mixed with the ice, and top up your raspberry mojito with soda water.
Garnish with fresh raspberries, freeze-dried raspberries and/or mint, if you like.
