Instructions
Goma dressing
Toast the sesame seeds in a dry frying pan until golden and fragrant.
Crush the sesame seeds well in a pestle and mortar. Some stay whole while others turn into a fine powder – this gives the goma dressing a really lovely texture.*You can also blitz them in a mini chopper if you prefer – or put all the ingredients in a mini chopper and blend the goma dressing to the consistency you like.
Then stir the remaining ingredients together with the crushed sesame seeds until you have a smooth, creamy goma dressing.*You can leave out the lime, but for this particular salad I think it gives the goma dressing just the right sharpness.*If you chill the goma dressing, you may need to loosen it with a little water, as it can thicken over time – because the crushed sesame seeds absorb the liquid.
Pointed cabbage salad with edamame beans
Finely shred the pointed cabbage and finely slice the spring onions.
Combine the cabbage, defrosted edamame beans and spring onions in a bowl.
Add a couple of generous tablespoons of goma dressing and toss with the salad.*Bear in mind that when you toss the cabbage with the goma dressing, the cabbage will naturally become "marinated" and lose some of its crunch. So toss the cabbage with the goma dressing just before serving, otherwise it turns too soft – for my taste, at least.*You can also simply top the salad with goma dressing – then it stays crisp and fresh.
Scatter the finished salad with chopped peanuts and, if you like, a little flat-leaf parsley, and serve with extra goma dressing on the side.
