300gsalsiccia – fresh Italian sausages
200gmascarpone
80gParmesan, grated
2-3fresh mozzarella balls
4small potatoes, thinly sliced
Salt and pepper

2-4burrata for the top, depending on size
4handfulsrocket
Fresh basil
Chilli flakes (optional)
Instructions
Divide the dough into 4 and roll out into thin circles about 30 cm in diameter.
Spread the mascarpone over the bases and smooth it out well – just as if it were a tomato sauce. If the mascarpone is very firm, it is a good idea to stir it until smooth first, so you don't end up tearing the bases.
Top the pizzas with the potatoes and mozzarella – squeeze the meat out of the sausage casings and dot it over the bases in small clumps as well.
Sprinkle with Parmesan and season with salt and pepper.
Bake the pizzas until crisp and golden – in the oven, about 12-15 min at 250°C. Keep an eye on them – ovens vary.
Place a good handful of rocket on each pizza and top with freshly chopped basil, burrata, freshly ground pepper and chilli flakes if you like.
