250gmozzarella
250ggood-quality Italian ham, sliced
100gnduja - perhaps a little more
1onion, cut into rings
Salt and pepper
Fresh basil, to serve
Instructions
Drain the mozzarella and squeeze out as much liquid as possible. I like to wrap the balls in a little kitchen paper and give them a good squeeze, – so they are completely dry.
Divide the dough into 4 and roll out into thin rounds about 30 cm in diameter.
Spread the bases with pizza sauce and scatter the mozzarella over them.
Lay slices of ham on top, ruffling them up a little, then dot with nduja and scatter over the onion rings.*Nduja is a hot, spreadable salami, so add as much as you like – or as much as your taste buds can handle.
Season with salt and pepper and bake until crisp and golden, – in the oven, about 12 min at 250°C (conventional oven, top and bottom heat).
Serve the pizzas with plenty of fresh basil on top.
