Ingredients
1tinpolpa (Italian finely chopped tomatoes) or chopped tomatoes
3tbsptomato purée
1shallot, finely chopped (or 1/2 small onion)
1-2clovesgarlic, grated or crushed
1/2tspdried oregano
1/2tspdried basil
1tbspolive oil
Salt and pepper
Instructions
Heat the oil in a small saucepan and sweat the shallot and garlic for a couple of minutes over a medium heat, - without letting them colour.
Add the tomato purée and the dried herbs and cook through for a further 2-3 minutes.
Pour in the polpa or chopped tomatoes, season with salt and pepper and let the pizza sauce simmer gently for at least 10 minutes, - ideally half an hour or so. On my hob that is setting 4 out of 9.I prefer my pizza sauce smooth, so if I only have chopped or whole tinned tomatoes, I like to blend them before adding them to the sauce.
Season the pizza sauce to taste with salt and pepper, and let it cool slightly before spreading it on the pizzas, - or refrigerate it until needed.
