Instructions
Peel and devein the prawns, removing the shells and any grit. Rinse them thoroughly, then pat them dry.
Heat a frying pan with a good glug of olive oil and sweat the shallots in it until soft and translucent.
Add the garlic and tomatoes and fry for 2-3 minutes. Season with chilli flakes, salt and freshly ground black pepper.
Pour in the white wine and let it reduce. Meanwhile, cook your pasta until al dente - reserve the cooking water.
Add the prawns to the pan and fry them for 2-3 minutes - turning them along the way.
Stir in the parsley and basil, and finally toss the pasta through in the pan.
Adjust the consistency with a splash of pasta cooking water and let everything come together in the pan for a couple of minutes.
Season to taste with salt and freshly ground black pepper, and serve with grated Parmesan on top.
