150gkale, tough stalks removed
1small onion, finely chopped
2clovesgarlic, grated or crushed
1handfulfresh basil
100mlstock, chicken or vegetable

Instructions
Toast the pine nuts in a dry frying pan and set them aside.
Put the pasta on to cook and cook it al dente, following the instructions on the packet.
In a separate saucepan, boil the kale in lightly salted water for about 6 minutes. Lift it out with a slotted spoon and put it in a blender.
Heat a little oil in the same frying pan and fry the onion and garlic until the onion is soft and translucent, then tip it into the blender along with the toasted pine nuts, fresh basil, stock and Parmesan. Blend until you have a smooth, even sauce.
Pour the sauce back into the frying pan, turn the heat to medium and season the sauce with salt, pepper and freshly squeezed lemon juice.
Toss the pasta with the sauce in the pan - you can lift it straight from the saucepan; a little pasta water clinging to it is a good thing.
Serve the pasta topped with grated Parmesan and plenty of freshly ground pepper.
