Ingredients
600ggnocchi
150gbutter
4sprigssage, leaves picked – a good handful
5clovesgarlic, crushed
1handfulhazelnuts, roughly chopped
1lemon, finely grated zest
3tbspolive oil
Salt and pepper
Parmesan, to serve (optional)
Instructions
Cook the gnocchi according to the packet instructions, then drain well.
Heat the oil in a frying pan over a high heat and fry the gnocchi until lightly golden, – about 5 minutes.Set them aside on a plate.
Melt the butter in the same pan, – add the sage and the crushed garlic, – and turn the heat down to medium. Let it cook for about 5 minutes, – the butter should foam vigorously around the sage and garlic and turn a light brown.
Add the hazelnuts and cook for another 5 minutes, – still over a medium heat. Make sure the butter only browns lightly; if it is colouring too fast, turn the heat down.
Return the gnocchi to the pan and toss everything together well.
Season with salt and pepper and the freshly grated lemon zest, - and serve as a light starter, or as a side to a piece of chicken, fish, pork or steak.Top with grated Parmesan, if you like.
