Ingredients
250mljumbo rolled oats (fine porridge oats can also be used)
2tbspchia seeds
4tbsppeanut butter
250mlmilk
100mlGreek yogurt, skyr or similar
2tbspmaple syrup, honey or similar
Topping
Fresh strawberries
Banana
Chopped nuts
Instructions
Combine the oats, chia seeds, syrup, peanut butter, yogurt and milk in a bowl and stir well. Cover with a lid and chill for at least 2-3 hours, – but preferably overnight. You can also mix the ingredients in 2 serving glasses or jars with lids, – make sure there is enough room for the topping the next day. That makes them easy to take with you on the go, or to grab a glass from the fridge in the morning or for a quick lunch.
Before serving, give your overnight oats a good stir. Divide between 2 serving glasses and top with sliced fresh strawberries, banana and chopped nuts.If you love peanut butter, you can smear the inside of the glasses with a little peanut butter, - it is so good to catch a little on the spoon.
Worth knowing about overnight oats
Overnight oats keep for 4-5 days in the fridge, – make sure all the ingredients are fresh.I prefer to make enough for 1-2 days at a time, – they are so quick to stir together, and that way I can vary the flavours.
I recommend using jumbo rolled oats, – they give the oats a lovely texture and bite. Fine porridge oats can, for my taste, turn a little mushy, – but that is of course a matter of personal preference.
