Instructions
Combine the oats, chia seeds, vanilla sugar, salt, maple syrup or honey, yoghurt, lemon juice, lemon zest and milk in a bowl and stir well. *You can also mix the ingredients in 2 serving jars with lids – make sure there is enough room for the topping the next day. That makes it easy to take with you on the go, or simply to grab a jar from the fridge in the morning or for a quick lunch.
Cover with a lid and chill in the fridge for at least 2-3 hours – ideally overnight.
Before serving, top your overnight oats with a couple of generous tablespoons of lemon curd and a little muesli or granola.
Worth knowing about overnight oats
Overnight oats keep for 4-5 days in the fridge – provided all the ingredients are fresh.I think they are at their best within the first 2 days – and since they are so easy to make, I never make more than 2 days' worth at a time.
I recommend using jumbo rolled oats – they give the oats a really pleasing texture and bite. Fine porridge oats can, for my taste, turn a little too mushy – but that is of course a matter of personal preference.
You can always stir in a little extra milk or yoghurt if you find the consistency has become too thick after a night in the fridge.
