200mljumbo oats (ordinary porridge oats also work)
2tbspchia seeds
300mlkoldskålDanish cold buttermilk dessert soup
100mlGreek yogurt, skyr or similar
2tspvanilla sugar
2tbspfreshly squeezed lemon juice
1/2lemon, finely grated zest only
1pinchsalt
Topping
4tbspstrawberry compote (jordbærgrød) – get the recipe here(optional)
Fresh strawberries, finely diced
Instructions
Combine the oats, chia seeds, vanilla sugar, salt, lemon juice and zest, yogurt and koldskål in a bowl and stir well. Cover with a lid and refrigerate for at least 2-3 hours – preferably overnight. You can also divide the mixture between 2 serving glasses with lids – just leave enough room for the topping the next day. That makes it easy to take with you on the go, or to simply grab a glass in the morning or for a quick lunch.
Before serving, top your koldskål overnight oats with strawberry compote and fresh strawberries.*If the oats have set too firmly, simply loosen them with a splash of milk, koldskål or a little extra yogurt.*You can easily leave out the strawberry compote, but if you have some in the fridge, it really does taste wonderful.
Overnight oats – keeping and tips
Overnight oats keep for 4-5 days in the fridge – provided all the ingredients are fresh.I think they are best within the first 2 days – and since they are so quick to make, I never make more than 2 days' worth at a time.
I recommend using jumbo oats – they give the oats a lovely texture and bite. Ordinary porridge oats can, for my taste, turn a little too mushy – but that is of course a matter of personal preference.
You are free to use whichever milk product you prefer, and the same goes for the yogurt.
Top your overnight oats with something crunchy – nuts, granola or similar; it makes a lovely contrast to the soft, creamy oats.
