250mljumbo rolled oats
2tbspchia seeds
1 1/2tspground cinnamon
1 1/2tspvanilla sugar
200mlmilk
100mlGreek yoghurt, skyr or similar
1/2large orange, juice and finely grated zest
2tbspmaple syrup, honey or similar
1pinchsalt
To serve
Greek yoghurt, skyr or similar
Orange segments
Granola or something else crunchy, optional
Instructions
Put all the ingredients in a bowl and stir well to combine.
Cover with a lid and chill for at least 2-3 hours – but preferably overnight. You can also mix the ingredients in 2 serving glasses with lids. Leave enough room for the toppings the next day, and you have a breakfast that is easy to take on the go, or simply a glass to grab in the morning or for a quick lunch.
Before serving, give the oats a good stir, and adjust the consistency with more milk, yoghurt or orange juice if needed.Taste and add more orange zest if you like.
Divide the oats between 2 serving glasses and top with a couple of tablespoons of yoghurt or skyr, fresh orange segments and, if you like, a little granola, nuts or similar.
Tips for overnight oats
Overnight oats keep for 4-5 days in the fridge – make sure all the ingredients are fresh. I prefer to make enough for 1-2 days at a time. It takes no time to stir together, and that way I can vary the flavours.
I recommend using jumbo rolled oats, as they give the oats a really pleasing consistency and texture. To my taste, fine rolled oats can turn a little mushy, but that is of course a matter of preference.
