80gparmesan, finely grated
1ball of fresh mozzarella, drained

Instructions
Heat a little oil in a frying pan, season the chicken with salt and pepper and brown the pieces well on both sides over a steady, fairly high heat. Transfer the pieces to an ovenproof dish.
Heat a little more oil in the pan and fry the onion, garlic and chilli for a couple of minutes over medium heat.
Add the vegetables (tomatoes, courgette and red pepper) and let them fry for about 5 minutes before adding the white wine and the fresh and dried basil. Let it reduce slightly.*If the tomatoes are very watery, I recommend removing the seeds so they do not dilute the sauce.
Add the cream and parmesan and bring to a good boil, then let it simmer until the sauce thickens a little.
Stir the spinach into the sauce until it wilts, and season to taste with salt and pepper.
Pour the sauce over the chicken in the dish and scatter roughly torn pieces of mozzarella over the top.
Bake in a preheated conventional oven (top and bottom heat) at 200°C for 15 minutes, then turn up to 230°C and bake for a further 5 minutes.Check that the chicken is cooked through – the cooking time depends entirely on the thickness of the pieces and how long you browned them.*The tomatoes on top of the dish are extra, in addition to the 200 g in the recipe. They were roasted on the baking tray next to the dish, at the same time.
Let the dish rest for about 5 minutes before serving, and serve with your favourite pasta. When the sauce is tossed with the pasta it will thicken further on its own, thanks to the starch from the pasta.
