500gtortellini
250gsalsicciafresh Italian pork sausage
250gcherry tomatoes, halved if you like
150gcourgette, diced, or tenderstem broccoli, cut into florets
1onion, roughly chopped
4clovesgarlic, grated or crushed
2handfulsfresh spinach
1handfulbasil leaves
75gparmesan, finely grated
250mlcreamwhipping cream (38% fat) or double cream
150mlwhite wine (or stock)
150mlstock or water
50gsun-dried tomatoes (optional)
Salt and pepper
Instructions
Heat a deep frying pan or a saucepan over fairly high heat – squeeze the sausage meat out of the casings into the pan and fry it well, breaking it up, for about 5 minutes.*The sausages usually contain plenty of fat, so you can leave out the oil – otherwise add a little oil if needed.
Add the onion and garlic and fry for a couple of minutes more.
Season with pepper, add the cherry tomatoes and sun-dried tomatoes and fry for another 3-4 minutes.
Pour in the white wine and let it reduce, then add the cream and parmesan – and let the sauce simmer over medium heat for about 10 minutes.
Add the tortellini, fresh basil and the water or stock – and let it cook until the tortellini are done according to the packet instructions. It usually takes a little longer than stated, as not all the tortellini are covered by liquid – so stir the dish as it cooks.
Finally, stir the spinach and the tenderstem broccoli or courgette through the dish, heat through for a couple of minutes and season to taste with salt and pepper.*You can also fry the tenderstem broccoli or courgette along with the tomatoes – but personally I think it is rather nice when they keep some bite.
