If using dried lentils, rinse them thoroughly, then cook in lightly salted water for about 20 minutes. Rinse under cold water and drain well in a sieve. Pat them dry with kitchen paper or a tea towel.
Toss the lentils with a little olive oil and season with salt and freshly ground pepper - and, if you like, a little smoked paprika, cumin, onion powder or whatever flavours you prefer.
Spread them out on a baking tray lined with baking paper and bake in a preheated fan oven at 200°C for about 20-25 minutes. Turn them once during baking.
Leave them to cool on the baking tray.
Mulligatawny soup
Heat a little olive oil in a large saucepan and fry the onions until soft and translucent.
Add the garlic, carrots, celery, apple, chilli and ginger and fry for a further 5 minutes.
Stir in the spices, season with salt and freshly ground pepper, then add the tomato purée and cook, stirring, for a couple of minutes.
Pour in the chopped tomatoes, rinsed red lentils and stock, and leave to simmer for about 20 minutes - or until the lentils are completely tender.
Add the coconut milk (or cream), and season the soup to taste with freshly squeezed lime juice, salt and freshly ground pepper.
Serve the soup with fresh herbs and the crispy lentils - and a little cooked rice if you like.
