80gcheddar, grated
50ggrated mozzarella
1egg, beaten, for brushing

Beef filling
You can use leftover Mexican-spiced meat (about 350 g)
– or make a batch:
300gminced beef
1/2bell pepper, finely diced
1small onion, finely chopped
2tbsptaco seasoning (just under one sachet)
Salt and pepper
Oil
Instructions
Beef filling
Heat a splash of oil in a pan and fry the onion for a couple of minutes.
Add the mince and brown it well, then add the diced bell pepper and the taco seasoning.
Heat through for a couple of minutes, season to taste with salt and pepper, and let it cool slightly while you cut the pastry.
Mexican puff pastry plait
Unroll the puff pastry on a sheet of baking parchment.
The filling goes down the centre of the pastry, so cut diagonal strips in from each long edge until you reach 1/3 of the way into the sheet. Do this on both sides.See the photo just below the recipe for how to cut the pastry.
Spread half the cheese over the uncut strip of pastry in the centre, then spoon the meat on top. Sprinkle the rest of the cheese over the top.
Fold the ends of the pastry in over the filling, then fold the strips in over the filling, alternating from side to side, one at a time.See the video above the recipe if you need to.
Brush the top with the beaten egg and sprinkle with sesame seeds if you like.
Bake the plait in a preheated conventional oven (top and bottom heat) at 200°C for about 20 minutes.
Let it rest for 5-10 minutes before slicing and serving.Serve with a fresh green salad, guacamole, salsa, crème fraîche or similar.
