180gbutter, at room temperature
100gcaster sugar
50gplain flour
3eggs, at room temperature
1/2tspbaking powder
1pinchsalt
A little butter for the tin
Chocolate topping
150gdark chocolate (55% cocoa), roughly chopped
25gbutter
Instructions
Mazarin cake
Beat the butter and sugar together until well combined and creamy.
Add the marzipan and beat it thoroughly into the mixture.
Add the eggs one at a time, beating well after each egg.
Mix the flour, baking powder and salt, and stir into the batter.
Pour the marzipan batter into a buttered springform tin lined with baking parchment on the base.
Bake the mazarin cake in a preheated conventional oven (top and bottom heat) at 190°C for about 35 minutes. If in doubt, press gently on the centre of the cake to check whether it feels as firm as the rest of the cake. If the centre feels softer, give it a little longer.Let the cake cool before removing it from the springform tin and placing it on a plate.
Chocolate topping
Melt the butter in a saucepan.
Turn off the heat and stir in the chocolate, - stirring until it is smooth and free of lumps.
Spread the chocolate over the cake, - letting it drip down over the edges, and let it set slightly before serving the cake.Store the cake in an airtight container at room temperature.
