Ingredients
200gplain flour
200gbutter, at room temperature
220 gcaster sugar
3large eggs (4 if they are small)
1 1/2oranges – 75 ml freshly squeezed orange juice plus the finely grated zest
2 1/2tbspcocoa powder
2 1/2tspbaking powder
2tspvanilla sugar
1pinchsalt
Butter or neutral-tasting oil for the tin
Instructions
Beat the butter and sugar together until light and fluffy.
Add the eggs one at a time, beating thoroughly after each one so the mixture doesn't curdle.
Mix the plain flour, vanilla sugar, baking powder and salt, and fold half of it into the mixture.
Fold the orange juice and orange zest into the batter, then finish with the remaining dry ingredients (not the cocoa).
Transfer about 1/3 of the batter to a separate bowl and fold the cocoa powder into it.
Grease a loaf tin thoroughly with butter or neutral-tasting oil, and pour in half of the plain batter.
Spread the chocolate batter on top and finish with the remaining plain batter.
Using a metal skewer, wooden skewer or similar, draw a pattern through the batter so the colours swirl together slightly.
Bake the cake in a preheated conventional oven (top and bottom heat) at 180°C for approx. 42-45 minutes. If in doubt, test with a skewer to check that the cake is baked through in the centre.
Let the cake cool completely before removing it from the tin.
