Instructions
Tzatziki
Coarsely grate the cucumber and squeeze out as much liquid as possible. Put the cucumber in a sieve, season lightly with salt – roughly the amount you would add to the dressing anyway – and toss it with your hands. Leave the cucumber to drain for about 15 min., squeezing out more liquid a few times along the way.
Stir the yoghurt together with the garlic, olive oil, lemon juice and dill or mint.
Then fold in the drained cucumber and season the dressing to taste with a little salt and freshly ground pepper.
Greek salad
Stir together the ingredients for the marinade – olive oil, lemon juice, Dijon mustard, balsamic vinegar, honey, garlic and oregano.Season to taste with salt and pepper.
Combine the vegetables, olives and feta in a large bowl, add the parsley and toss everything with the marinade.
Layered tzatziki - Tzatziki with Greek salad
Spread the tzatziki in a thick layer on a plate.
Top with the Greek salad and finish with a drizzle of olive oil.
