2tinstomato polpa or chopped tomatoes*polpa is finely crushed tomatoes; chopped tomatoes give a coarser salsa
1lime, juice only
1small red onion, finely chopped
3-4clovesgarlic, grated or crushed
10slicespickled jalapeños (adjust to taste)
50mlketchup
50mlolive oil
2tspground coriander
1 1/2tspground cumin
Salt and pepper
A dash of Tabasco or chilli sauce, optional
Instructions
Drain the tomatoes thoroughly in a fine-mesh sieve. Stir with a spoon until all the liquid has drained off.*If you use chopped tomatoes, your salsa will be coarser. You can also use one tin of each, - it gives the tomato salsa a lovely texture.
Finely chop the red onion and jalapeños, and grate or crush the garlic.*Do yourself a favour and taste your jalapeños first, - there is a BIG difference in heat.
Tip the tomatoes into a bowl along with the red onion, jalapeños, garlic, spices, ketchup, lime juice and oil.
Stir the salsa well and season to taste with salt and pepper.*Add a dash of Tabasco or chilli sauce if you want a spicier salsa.
