Ingredients
100mlsesame seeds
75mlgood-quality mayonnaise - Hellmann's or similar
2tbspcane sugar
1 1/2tbspsesame oil
1 1/2tbsprice vinegar
1 1/2tbspsoy sauce
Instructions
Toast the sesame seeds in a dry frying pan until golden and fragrant.
Crush the sesame seeds thoroughly in a pestle and mortar. Some will stay whole, others will turn into a fine powder – this gives the goma dressing a really lovely texture.*You can also blitz them in a mini chopper if you prefer, or alternatively put all the ingredients in a mini chopper and blend your goma dressing to the consistency you like.
Then stir the remaining ingredients into the crushed sesame seeds until you have a lovely creamy goma dressing.*You may want to start with 1 tbsp soy sauce and taste to see whether you would like it saltier. Soy sauces vary a lot, and some are much saltier than others.
Store your goma dressing in an airtight container in the fridge for 8-10 days.*The goma dressing may thicken up after it has been in the fridge, partly because the crushed sesame seeds absorb the liquid. Loosen it with a little water, or adjust the consistency with a little extra of the other ingredients.
