Homemade Cajun seasoning
Recipe for homemade Cajun seasoning mix.

Ingredients
- 3 tbsp paprika
- 1 1/2 tbsp dried thyme
- 1 1/2 tbsp dried oregano
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 1/2 tsp cayenne pepper
- 1/2 tsp ground cumin
- Chilli flakes to taste, depending on how hot you want it
Instructions
- Mix all the spices together and season to taste with salt and pepper.
- Store the spice mix in an airtight container or a spice jar.I find the seasoning develops more aroma once it has had a few days to "settle" – the different spices meld together in the blend. But of course it can be used straight away.
