Instructions
Cut the chicken into fairly large pieces – not too small, or they will dry out during cooking.
Cut the onions into quarters, then halve the quarters, and separate them into pieces that hold together in 2-3 layers.
Cut the peppers into large pieces.
Combine the chicken, onions, peppers, oil and gyros seasoning in a bowl and toss well so every piece is coated in oil and seasoning. Season with salt and freshly ground black pepper.*If you have time, let it marinate in the fridge for an hour or so.
Thread the chicken, onions and peppers onto 4 skewers. Pack the pieces closely, but without squeezing them together too much.
Grill the chicken skewers until golden on all sides and the chicken is cooked through, turning them as you go.They can be cooked over charcoal, on a gas barbecue or even in the oven or a frying pan – whatever works best for you.*If you cook them in the oven, give them about 15 minutes at 220°C – depending on the size of the pieces, of course. Always check that the chicken is cooked through.
