Instructions
Bread croutons
Preheat the oven to 200°C, conventional oven (top and bottom heat).
Cut the bread into fairly large cubes of about 2x2 cm and tip them into a bowl.
Mix the oil with your chosen seasonings and toss it with the bread pieces. Season with salt and toss again thoroughly.
Spread the bread pieces on a baking tray lined with baking parchment, and bake the croutons for about 20 minutes, until golden and crisp right through. Turn them once halfway through if you can.
Let the croutons cool before tossing them with the salad.
The salad
Combine the 2 lettuces in a bowl.
Halve the tomatoes, slice the cucumber and cut the onion into thin wedges.
Mix the ingredients for the vinaigrette, and season to taste with salt and pepper.
Toss the tomatoes, cucumber and onion in the vinaigrette, then toss everything with the lettuces and the crisp bread croutons. Serve immediately. If the salad is to be kept in the fridge and served later, I recommend waiting to toss the lettuces and croutons with the vinaigrette until just before serving, so they keep their crunch.I can also recommend topping the salad with a good feta — it tastes wonderful.
