Instructions
Put all the dressing ingredients in a blender and blend until you have a smooth, creamy dressing. Adjust the consistency with water and season to taste with salt.
Shred the cabbage finely – it should almost be cut into small squares. Dice the cucumber finely and slice the spring onions. Toss well with the dressing and set the salad aside.
Halve the chicken fillets horizontally (parallel to the board) so you get 2 thin, flat fillets from each piece. Season with Cajun seasoning, salt and freshly ground black pepper.
Heat a splash of oil in a frying pan and fry the chicken until golden and cooked through. Cut the chicken into slices.
Warm your tortillas - in the pan, if you like - and fill them with green goddess salad, fresh spinach and spiced chicken. Roll them up, secure them with a cocktail stick if needed - and serve.
