To serve
4homemade flatbreads or pitta breads
400goven chips
4medium tomatoes
1romaine lettuce or other salad leaves
1small red onion
Instructions
Tzatziki
Coarsely grate the cucumber and squeeze out as much liquid as possible.
Put the grated cucumber in a sieve, season with a little salt – roughly the amount you would add to the dressing – and toss it through with your hands. Leave the cucumber to drain for about 15 min., squeezing out the liquid a few more times along the way.
Meanwhile, mix the ingredients for the dressing: stir the yoghurt together with the garlic, olive oil, lemon juice and mint. Then fold in the cucumber and season the dressing with a little pepper and more salt if it needs it.
Chill until ready to serve – and do let it stand for a while, it only gets better.
Greek gyros and sides
Heat the chips in the oven as directed on the bag.
Slice the vegetables as you like and set them aside.
Heat a little oil in a frying pan and fry the meat over a medium heat for a couple of minutes.
Season with the homemade gyros seasoning and continue frying until the meat is golden and cooked through.
Just before serving, warm the flatbreads or pitta breads – and your pitta gyros are ready to serve.
Assemble your pitta gyros with chips, salad, spiced pork and plenty of tzatziki.
