200gplain flour
1 1/2tspbaking powder

1/2lwhipping cream (38% fat)
1 1/2lemons, juice and finely grated zest
160gicing sugar
1tbspvanilla sugar
To serve
250gdark chocolate (55%), chopped
600gstrawberries, cut into pieces of varying sizes
Fresh mint and sorrel, optional
Instructions
Beat the butter, sugar and marzipan to a pale, creamy mixture - this easily takes about 5 minutes.Because of the large quantity, this is easiest in a stand mixer. Scrape down the sides of the bowl as you go.
Add the eggs one at a time, beating after each until it is fully incorporated into the mixture.
Combine the flour and baking powder, sift it into the mixture and fold it in quickly. You can also beat it in, but take care not to overmix.
Spread the batter in a deep traybake tin lined with baking parchment, and bake in the middle of a preheated conventional oven (top and bottom heat) at 180°C for about 30-35 minutes. The tin is the deep oven tray that comes with the oven - approx. 42x32 cm.
Scatter the chocolate over the top of the hot cake and let it melt, then spread it out with the back of a spoon.Let the chocolate set completely before you continue. If you like, put the cake in the fridge to speed this up.
Put all the ingredients for the mascarpone cream in a bowl and whisk them together until the cream thickens.
Spread the mascarpone cream over the top of the cake and arrange the strawberries on top. Decorate with mint and sorrel, if you like.Keep the cake in the fridge until it is time to serve.
