Ingredients
600gchicken breast or mini fillets
1 1/2tspgarlic powder
1 1/2tsponion powder
2 1/2tsppaprika
3tbspoil
Salt and freshly ground black pepper
Butter sauce
80gbutter
5clovesgarlic, grated or finely chopped
1tspchilli flakes
1/2lemon, finely grated zest
25gParmesan, finely grated
1handfulparsley, finely chopped
Freshly ground black pepper
Instructions
Cut the chicken into thin strips. If you are using mini fillets, halve them horizontally (parallel to the board) so the pieces are thinner. You can also cut the chicken into cubes.
Mix the spices and toss the chicken in them together with the oil, then season with salt and freshly ground black pepper.
Thread the chicken onto the skewers, folding each piece back and forth so it sits in layers. Push the pieces together so they sit snugly, but do not squash them too much.
Cook the skewers in an air fryer for about 10-12 minutes at 200°C, or in a preheated conventional oven (top and bottom heat) for about 10-12 minutes at 215°C.Timings vary depending on the air fryer or oven you use and the thickness of the pieces – so check on them as they cook.
Meanwhile, melt the butter in a saucepan and cook the garlic and chilli flakes over a low heat for 3-4 minutes. It must not brown.
Add the lemon zest and season with freshly ground black pepper.
Take the pan off the heat and stir the Parmesan into the butter first, then the parsley.
Brush the hot chicken skewers generously with the Parmesan and garlic butter and serve straight away.
