Ingredients
1flank steak, approx. 600 g
Salt and freshly ground pepper
A little oil, if needed
Instructions
Cut the meat into strips about 4 cm wide, then cut each strip into thin slices - about 4-5 mm.
Stack the slices tightly together and divide them between 4 skewers. Flat skewers are best, as they are the easiest to control.
Press the meat firmly together - this stops it drying out as it cooks.
Season with salt and freshly ground pepper, and pan-fry or barbecue the skewers for about 2-3 minutes on each side. If you like, also sear the 2 flat sides briefly to get a good crust. Use a little oil if needed. The cooking time depends on how you like your meat done and how tightly you have pressed it together. The more tightly it is pressed, the better it holds on to its juices and its red or pink centre. You can easily fold the meat apart slightly to check how it is cooked.
