Equipment
Air fryer
Ingredients
2kgpork loin with scored rind
2tbspcoarse salt
6bay leaves
A little water (optional)
Instructions
Rub the rind of the pork loin with the salt, making sure it gets well down into the scores too, then tuck the bay leaves down into the scores.*It is important that the rind is scored right through, but without cutting into the meat. If you cut into the meat, the crackling can be hard to get crisp, as meat juices will rise up into the rind and make it soft.
Place the roast in the air fryer basket, and if needed put a little scrunched-up foil underneath so the joint lies as level as possible – the rind should ideally sit at the same height all over.Feel free to add a little water to the bottom if you want to make gravy, but don't let it come up and touch the roast. *Check that your air fryer can take aluminium foil.
Cook the roast for about 60-70 minutes at 180°C, checking on it a couple of times along the way. It should come out when the core temperature is about 63-65°C.*Ideally insert a meat thermometer into the roast from the start, so you can keep an eye on the temperature as it cooks. Otherwise, check the core temperature after about 50 minutes.
If the crackling is not yet crisp when the roast is at about 60°C, or after about 60 minutes, you can turn the heat up to 200°C for the last few minutes.I have never needed to; 70 minutes has been right every time. Perfectly juicy roast pork and crisp crackling – but it naturally depends on your air fryer.
Let the roast rest for about 15-20 minutes before carving.
