Ingredients
24small croustades (ready-made pastry cases) - I buy the Rahms brand
12slicesserrano ham - or Parma ham
Freshly ground pepper
Red-veined sorrel, to garnish (optional)
Parmesan mayo
1egg yolk
150mlgood neutral-tasting oil – I use rapeseed
40gparmesan, finely grated
1/2clovegarlic, finely grated
1tbsplemon juice
1tspmustard, Dijon or wholegrain
Salt
Instructions
Parmesan mayo
Set all the ingredients out on the worktop half an hour ahead, so they are not too cold to work with.Put all the ingredients except the oil in a mini chopper and blitz briefly to combine. Then add the oil a little at a time with the motor running. You can also put all the ingredients in a tall jug, finishing with the oil, and use a stick blender.Season the mayonnaise with salt, and add a little more lemon or Dijon if needed.Keep chilled until ready to serve.
Croustades with parmesan mayo and serrano
Fill the croustades half full with parmesan mayo - a good teaspoonful each.
Halve the ham slices lengthways, fold the pieces so they ruffle slightly, and lay the ham on top of the mayonnaise.
Finish with freshly ground pepper and a little sorrel, if using.
