Instructions
Crisp cornflake chicken in the air fryer
Beat the eggs together and set aside.
Crush the cornflakes in a bag or similar, - they should stay fairly coarse, and mix them with the spices, salt and pepper.
Slice the chicken breasts horizontally (parallel to the board) into two thinner pieces, - so you get 2 flat fillets from each breast.
Dip the chicken in the beaten egg, then in the crushed cornflakes.Press the cornflakes firmly onto the chicken by squeezing the pieces gently in your hands.
Place them in the basket of your air fryer and spray the tops with cooking spray.
Cook them for about 12 minutes at 200°C.After 6 minutes, turn the pieces, spray the "uncooked" side with cooking spray again, and cook for a further 5-6 minutes.Be aware that air fryers vary a great deal in how they heat, so keep an eye on them along the way. Some air fryers are also meant to be preheated before use, - so do that if yours is one of them.
Season the chicken with a little salt after cooking if you like, and serve with your favourite dip, on top of a salad, in a poke bowl, a burger or the like.
