Instructions
Salsa - pico de gallo
Cut the tomatoes into small dice, and finely chop the other ingredients.
Mix the vegetables together in a bowl, – do taste the chilli before adding it. You may have got hold of a hot one, – so add it to taste.
Pour over the oil and the juice of one lime, and season to taste with salt. If you would like more acidity, add extra lime juice.
Guacamole
Halve the avocados and scoop out the flesh with a spoon.
Mash it roughly with a fork, and put it in a bowl together with a couple of tablespoons of the fresh salsa (pico de gallo), then season to taste with salt, freshly ground pepper and lime juice.
Chicken burger
Heat a little oil in a frying pan and fry the chicken until golden and cooked through, - season with salt and pepper.*Meanwhile, warm the burger buns.
Cut the cheddar slices into 4 and lay a small piece of cheese on each piece of chicken so it melts, - allow for about 3 mini fillets per person.
Spread the bottom halves of the buns with a generous layer of guacamole, and lay the chicken on top.
Add a couple of crisp lettuce leaves, top with a couple of large spoonfuls of fresh salsa and finish with the top of the bun. You can spread this with mayonnaise if you like, - but that is a matter of taste.
