Instructions
Cut the chicken into fairly large chunks – not too small, or they will dry out during cooking.
Cut the onions into quarters and halve these again, then separate them into pieces of 2-3 layers that hold together.
Combine the chicken, onion, oil and seasoning in a bowl and toss well so every side is coated in the oil and spice mix.If you have time, it is worth letting the chicken marinate in the fridge for an hour or so.
Thread the chicken and onion onto 4 skewers; pack them closely, but without squashing them together too much.
Cook the chicken skewers on the barbecue until golden on all sides and the chicken is cooked through. Turn them as they cook. They can be cooked over charcoal, on a gas barbecue or even in the oven or in a frying pan – whatever suits you best.If cooking them in the oven, give them about 15 minutes at 220°C in a conventional oven (top and bottom heat) – depending on the size of the pieces, of course. Always check that the chicken is cooked through.
