Ingredients
6slicesgood-quality sliced white bread - or 12 if the slices are small
6slicesSerrano ham
1/2Vesterhavsost - about 100-150 gDanish aged semi-hard cheese; a mature Gouda or Comté makes a good substitute
100mlDijonnaise - or homemade mustard mayo
Pickled red onions
Flat-leaf parsley or rocket for the base
Fresh soft thyme for the top
Butter for frying
Instructions
Using a round cutter, cut 12 rounds about 7 cm in diameter from the bread slices.
Melt a little butter in a frying pan over medium heat and fry the bread rounds until crisp and golden on both sides, – about 3 min. per side. Leave them to rest on a little kitchen paper.
Slice the cheese, - the slices should be a couple of millimetres thick.
Halve the slices of Serrano ham so you end up with 12 half slices.
Spread the bread rounds with a generous dollop of mustard mayo and top with a few sprigs of rocket or flat-leaf parsley.
Lay slices of Vesterhavsost on top, ruffle the Serrano ham and place it on the cheese.
Finish with pickled red onions and small sprigs of soft thyme.
