1potfresh basil, leaves picked
8clovesgarlic, peeled and crushed
3tbspolive oil
1/2tspdried basil
1handfulpine nuts
Salt and pepper
1/2-1baguette
Instructions
Tip the pine nuts into a dish that fits in your air fryer and toast them for 4-5 minutes at 160°C. I use a round dish that came with my air fryer.Set them aside on a plate.
Cut the baguette into thin slices, brush/spray them with a little oil, sprinkle with salt and lay them directly on the rack in the bottom of your air fryer, – in two batches if necessary.Bake them for about 8 minutes at 180°C.Set the slices of bread aside on a wire rack.
Tip the tomatoes into a dish that fits in your air fryer, I use the same one as for the pine nuts.
Drizzle the oil and scatter the dried basil over the tomatoes, season with salt and pepper, and add the crushed garlic cloves. You can crush the garlic with the flat of your knife blade, the bottom of a mug or similar.
Roast the tomatoes for about 8-10 minutes at 190°C, – then let them rest for a couple of minutes out of the air fryer.
Meanwhile, place the two burrata on a plate, open them up well, and scatter the fresh basil leaves over the whole plate.
Add the roasted tomatoes and garlic, – and pour the oil/juices from the roasted tomatoes over the burrata.
Season with freshly ground pepper, scatter over the pine nuts and serve with the crisp slices of bread.
