Put all the ingredients for the blini batter in a bowl and stir until smooth and well combined.
Melt a generous knob of butter in the pan and spoon small dollops of batter into the pan, in whatever size you would like your blinis.
Turn the blinis when the batter starts to bubble lightly on top – they need about 1 1/2 min. on each side over medium heat.
Let the blinis drain on a little kitchen paper – they should be warm but not hot when served (otherwise the crème fraîche melts).
Blinis with lumpfish roe
Top the blinis with crème fraîche and a good spoonful of lumpfish roe, then scatter over the red onion, chives and a little dill, if using.Season with freshly ground pepper.
