Instructions
Heat a casserole or deep frying pan and brown the beef well in a splash of oil. Season with salt and freshly ground pepper, then set the meat aside on a plate.
At the same time, set a frying pan or saucepan over a low heat and let the sausages fry until golden while you make the rest of the dish.
Add a little oil to the pan the meat was browned in and fry the bacon until lightly golden, then add the mushrooms and fry until they have released their liquid.
Add the onion and garlic and fry until the onion is translucent.
Add the carrots and tomatoes and fry for a couple of minutes, then sprinkle over the paprika and stir to combine.
Add the tomato purée and heat it through for about a minute, then return the meat to the pan and pour in the stock. Let the stew simmer for about 10 minutes.
Add the cocktail sausages, cream and pearl onions to the stew and heat through.
Season to taste with salt and freshly ground pepper, and serve with your chosen accompaniments and a sprinkling of finely chopped parsley.
