Instructions
Heat a casserole or deep frying pan and brown the meat well in a splash of oil. Season with salt and freshly ground pepper, then set the meat aside on a plate. At the same time, put a frying pan or saucepan over a low heat and let the sausages fry until golden while you make the rest of the dish.
Pour a little oil into the pan the meat was browned in, fry the bacon until lightly golden, then add the mushrooms and fry until they have released their liquid.
Add the onion and garlic and fry until the onion is translucent, then sprinkle over the paprika and stir to combine.
Add the tomato purée and stir well, then add the peppers and return the meat to the pan.
Pour in the stock and the chopped tomatoes and let the stew simmer gently for 5-10 minutes - depending on the cut of meat used.
Add the cream and stir the cocktail sausages into the stew. Heat through and season to taste with salt and freshly ground pepper.
Serve the stew with your chosen accompaniments and a sprinkling of finely chopped parsley.
