50gbutter
Baileys cream cheese filling
200gcream cheese
250mlwhipping cream (38% fat)
75mlBaileys
50gicing sugar
1 1/2tspvanilla sugar
To serve
Chocolate sauce
Chocolate shavings or grated chocolate
Edible gold dustoptional
Instructions
Biscuit base
Melt the butter in a saucepan and take it off the heat.
Blitz the biscuits to fine crumbs, stir them into the melted butter and divide the mixture between 6 serving glasses.
Baileys cream cheese filling
Put the cream cheese, cream, Baileys, icing sugar and vanilla sugar in a bowl and whisk until the mixture thickens.
Transfer the filling to a piping bag – it makes it easier to control – and pipe it into the glasses.
Serving
Make a hollow in the top of the filling. I dip a measuring spoon or teaspoon in boiling water and use it to make the hollow – that way the spoon releases cleanly.
Fill the hollows with chocolate sauce, sprinkle with chocolate shavings and a little edible glitter, if you like – and serve. The desserts can easily be prepared earlier in the day and kept in the fridge. Bear in mind that the chocolate sauce may thicken, so if you are preparing them ahead, I recommend adding the chocolate sauce shortly before serving.
